Ingredients

500g chicken thigh, trimmed and diced

2 Tbls Olive Oil

1/4 cup honey

3 Tbls Wholegrain Mustard

4 garlic cloves, crushed

1/2 cup bacon, diced (approx. 3 rashers)

1 brown onion, finely sliced

1 cup thickened cream

Method

In a large frying pan heat olive oil on medium-high heat. Add chicken and onion and cook, stirring, until onion softens. Add bacon and garlic and cook for a further 3-4 mins or until bacon begins to brown. Turn heat down to low-medium.

In a glass jug combine honey, mustard and cream. Season to your taste and mix well. Pour mixture over chicken and leave to simmer for a further 10-12 minutes or until sauce begins to thicken. Serve immediately.
