2 cups pre-cooked roast lamb, roughly chopped
1 brown onion, finely diced
3 garlic cloves, crushed
1 cup Instant Gravy Mix
1 cup frozen peas
1 medium carrot, finely diced
150g feta, crumbled
4 sheets frozen Puff Pastry, thawed to room temperature
In a medium frying pan, heat olive oil over med-high heat. Add onion, carrot and garlic. Sauté for 5-8 mins or until onion has softened.
Reduce heat to low-med. Add lamb, gravy, peas and Feta. Gently stir to combine trying not to crush the Feta. Simmer for a further 5 minutes and remove from heat. Allow to cool almost completely before assembling pies.
Using the pastry cutter from the Pie Maker, cut 8 large disks and place 4 of them in the base of each hole. Fill each case with Lamb mixture and cut 8 small discs of pastry for the lids. Place on top.
Turn on Pie Maker and allow to cook for 5-7 minutes or until pastry is golden. Repeat with remaining mixture.
