2 1/2 cups self raising flour
1 Tsp baking powder
1 cup caster sugar
1/2 cup milk
2 Tsp vanilla essence
1 egg
1/2 cup vegetable oil
150g fresh raspberries
150g white chocolate bits


Preheat oven to 180ºC. Grease or line 12 muffin cups.

In a bowl, mix flour, baking powder and sugar. In separate bowl, mix the oil, egg, milk, and vanilla. Gradually add the flour mixture into the egg mixture, mixing well.

Fold in the raspberries and the chocolate, mixing well. Bake in preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
