2 chicken breasts, cut in quarters
2 litres chicken stock
1 cup boiled water
3 Tbls Vegeta stock powder
1/2 bunch Silverbeet, roughly chopped
1 tin creamed corn
1 brown onion, roughly chopped
200g thin rice noodles
1/3 cup soy sauce
Salt & Pepper
In a large pot bring chicken stock and water to the boil. Add Vegeta and chicken breast. Cook chicken for approximately 10 mins or until cooked through. Remove chicken from stock and put aside.
Add Silverbeet, corn, onion, noodles, soy and salt and pepper to stock and cook for 10 minutes. Meanwhile, shred cooked chicken using a fork. Return chicken to stock and continue cooking for a further 10 minutes. Season to your taste and serve with fresh bread.
