Ingredients

Lamb Koftas

1 Tsp Olive Oil

1 Brown Onion, finely diced

500g Lamb Mince

2 Tsp Cumin

1 Tsp Oregano

1 Tsp Ground Coriander

2 Garlic Cloves, crushed

1/2 Tsp Chilli Flakes

2 Tsp Smoked Paprika

Zest and juice of 1 lemon

To Serve

5 Souvlaki Breads

160g Hummus

10 Cherry Tomatoes, halved

1 Lebanese Cucumber, finely diced

80g Feta, crumbled

Method

In a large frying pan, heat 1/2 tsp olive oil over med-high heat. Add onion and garlic and cook until onion is translucent. Remove from heat.

In a large mixing bowl add all other ingredients for the Koftas (except lemon juice) and season to taste. Using hands mix well until combined. Add cooled onion and garlic. Mix.

Take a heaped tablespoonful of mixture and roll into small sausage shape. Continue with remaining mixture.

Heat remaining oil in frying pan over medium heat. Cook Koftas for 6-8 minutes or until browned and cooked through.

Add 1 piece of Souvlaki bread to frying pan and cook for 20 seconds on one side only. Repeat with remaining breads.

Arrange breads on plate, spread Hummus completely over one side, top with 2 Koftas, tomato, cucumber, Feta and a squeeze of lemon juice. Serve immediately.
